While the base is being cooked, make frying from onions and carrots, tomato is welcome, but not dominant. When the potatoes are ready (about 15 minutes from the beginning of the boil) add the onions and carrots, spices, including salt and pepper. And that's it! When serving, sprinkle with herbs. Can be served with croutons, but not bad without them.

    Soups are perfectly varied by adding other ingredients, for example, pumpkin, pre-fried with onions and carrots, pickles or tomatoes (preferably green and strong), all kinds of smoked meats, sausages, of course - natural meat, leeks, cheese.     No. 2. for second courses.

    Second courses are almost always based on boiled lentils, which, when ready, are thrown into a colander, allowing the water to drain, and then seasoned to taste, stewed with other ingredients, baked, that is, brought to full readiness.

    It is good to cook lentils for main courses, adding onions (chopped or whole), garlic (preferably whole), herbs tied in a bunch to the water, spices that you like more. The holy rite begins when the lentils are almost completely ready. We drain the liquid and fantasize.

    A good, very simple recipe for making lentils: fry a few sausages (slicing - whichever you like), you can add bacon or bacon, put lentils in the same pan and lightly simmer under a lid over low heat. At the end, you can add cream or sour cream, or you can do without them. As a variety: this dish perfectly accepts sweet and sour berries and fruits, for example, plums, cherry plums, currants, acquiring a completely unusual taste and appearance.

    Another simple recipe for making lentils: mix the finished product with fried onions, a clove of garlic passed through a press, spices to taste, form cutlets, roll in flour (preferably in a lezon) and fry until brown. With chili or tartar sauce - great both cold and hot.

    Lentils with meat can take a dominant place on the table. It is better to bring the meat to almost full readiness in advance, then add lentils.

    Sprinkle with flour from the leg, place in a thick-walled vessel (such as a cauldron or duck), where there is already a finely chopped onion and several cloves of garlic, pour water or broth and cook on low heat for about 1 hour after boiling. After an hour, open, add lentils (4 legs - 300 grams), add tomatoes - fresh or stewed, spices, salt, you can put or simply fried, red bell pepper and cook for another 30 minutes under a lid over low heat.     With pork or beef, the procedure is the same: almost finished meat plus lentils, plus additives from the mistress-craftswoman - and simmer over low heat until fully cooked.

    No. 3. Lentils in salads.

    Green (French) lentils are perfect for salads, they practically do not boil over and perfectly harmonize with other ingredients.

    Boil a glass of green lentils (see previous recipes). A handful of dried apricots - steam, cut into strips and fry with one onion in vegetable oil. Chop a handful of walnuts.     Lentils are really legendary and very ancient plants. It was eaten as far back as the Bronze Age. However, despite the venerable age of lentils, today it is a rare guest of Russian housewives. Of the legumes, peas and beans are much more popular, and potatoes, rice and pasta are more commonly used as a side dish. But it was not always so. Moreover, in the Middle Ages, Russia was the main supplier of lentils. Many dishes were made from it and even bread was baked. But later, lentils were replaced by other crops, the same potatoes, which is completely undeserved.

    Now lentils are gradually returning to their place on our tables, but already as something exotic. And this is despite the fact that it is sold in all stores, and the price of the "curiosity" is low. And it is very worth buying lentils - they are easy to prepare, tasty and extremely healthy. Even a small portion is enough to have a bite to eat and keep you feeling full for a long time.

    Diet product

    Lentils are legumes, which means they are high in protein (from 25 to 35% by weight), which makes them especially attractive for those who limit themselves to meat and dairy products - vegetarians who are fasting. In addition, lentils are environmentally friendly - they do not accumulate nitrates, toxic elements, and radionuclides.

    In a sense, lentils are an antidepressant. It is believed that the constant use of it in food calms the nerves, gives peace of mind and balance. At the same time, lentils raise tone and improve immunity. The use of lentils is especially recommended for diseases such as heart disorders, digestive problems, diabetes. Lentils contain a lot of healthy dietary fiber and virtually no fat, which makes them an irreplaceable dietary food.

    Cooking secrets

    Protein-rich foods often require long cooking and sometimes soaking. But not lentils. Moreover, it cooks faster than all legumes - 10 to 15 minutes.

    You can cook many dishes from lentils - chowder and soup, mashed potatoes and stews, salads and side dishes, cutlets and meatballs, pie filling. Lentils are especially good with additives such as onions, garlic, tomatoes, carrots. Both classic spices and herbs and more "exotic" ones - mint, oregano, cumin are suitable as seasonings.

    In soups and main courses, lentils are often combined with meat and chicken, including using broth as a base. If you have little time to cook, you can purchase lentils in special cooking bags, in this case they do not need to be rinsed and measured. Lentils can also be bought canned, in cans, then they are completely ready for use.

    Rinse lentils with cold water before cooking. It is best to do this in a colander with small holes so that foreign inclusions go away, and the lentils remain. For cooking, you need to take 1.5-2 times more water than for beans. Lentils should be thrown into boiling water. Then wait for the water to boil again and reduce the heat. Cover the pan with a lid and cook, depending on the variety, for 10-40 minutes, stirring occasionally and tasting gently to ensure readiness. It is recommended to salt the lentils at the end of cooking - this way they cook faster.

    Sometimes the weight of lentils in ready-made dishes is indicated in grams, which is not always convenient, especially for those who do not have kitchen scales. Then the following data will help: the weight of a full faceted glass of lentils is 210 grams, the usual 200 grams is 170-180. Lentil fruits are usually small and flat. The color depends on the variety. By the way, there are not so many varieties of these legumes, and not all of them are represented in Russia.

    Red lentils (aka red, orange, Egyptian)

    The most "odious" variety - it was from it that the famous biblical stew was made, so Esau, who "bought" for the miracle soup, began to be called Edom (Edom), which means red. Red lentils are widely used in Asian cuisine. It is peeled from the shell, so it boils faster than all other varieties, almost immediately. In addition to stews, mashed potatoes, fillings for pies, cereals, salads and stews are made from it.

    For mashed potatoes, by the way, this variety is just perfect - thanks to its quick softening, but if you need to keep the shape of golden "beads", for example, to decorate a salad, you will have to carefully monitor the cooking time so that the lentils do not turn into gruel. And keep in mind that when cooked, the color of lentils turns from red or orange to golden, that is, it fades a little.

    Recipe. Lentil stew

    Traditionally, the stew is made from red lentils, however, you can try using other varieties, increasing the cooking time. There are many recipes for this dish, some of them involve adding celery, carrots, potatoes, parsley root, rosemary and cilantro. In some variants of chowder (for example, French), sour cream is added to the finished soup. The recipe shown here is remarkable for its simplicity and availability of ingredients.

    Ingredients: 200 g lentils, 5 tomatoes, 1 onion, 4 cloves of garlic, 2 tablespoons of vegetable oil, 1.5 liters of water, 2 tablespoons of lemon juice, salt, pepper, spices, herbs - to taste.

    Cooking. Sort out the lentils and rinse. Fry the diced onion until soft. Add lentils, keep on fire for 2 minutes. Transfer to a saucepan, add water and cook until lentils soften (about 20 minutes). Cut the tomatoes into cubes, the garlic into pieces and add to the stew. Season with salt, pepper, sprinkle. Bring to a boil and cook for a couple of minutes. Remove from heat, add lemon juice if desired. Garnish with herbs before serving.

    Green lentils

    This variety is harvested unripe when the fruit is still green, hence the name. Like red lentils, these lentils are great in salads. It goes well with mushrooms and meat (chicken), even after long cooking it does not turn into mashed potatoes, retains the shape of peas.

    Recipe. Lentil cutlets

    These cutlets are perfect for a snack, they are ideal for vegans and during the fast.

    Ingredients: 1 glass of green lentils, 6 onions, vegetable oil (for frying), salt, spices, breadcrumbs.

    Cooking. Pour the washed and free from foreign inclusions lentils with water and leave overnight. Chop the onion into pieces, add the spices and fry in oil until golden brown. Throw the lentils on a sieve or colander so that there is excess moisture in the glass, and scroll with the onions in a meat grinder or food processor. Add salt and pepper. Knead the minced meat. Make cutlets from it, roll them in breadcrumbs. Fry on both sides until a characteristic "crust", close the lid and simmer for another 5 minutes. The total frying time is from 15 minutes.

    Brown lentils

    Brown lentils are harvested fully ripe. This variety is the only one of all that needs to be soaked - from half an hour. However, it boils well and can be mashed. Of all the varieties, brown lentils have the strongest nutty (and sometimes mushroom) flavor.

    Recipe. Zucchini stuffed with lentils

    Ingredients: 1 cup brown lentils, 2 medium zucchini (preferably zucchini), 1 onion, 3 cloves of garlic, 6 tomatoes, 1 chili pepper, a bunch of parsley, 2 tablespoons of parmesan cheese, vegetable oil, 100 ml water, salt, herbs taste.

    Cooking. Prepare lentils following package directions. Form "boats" from zucchini by dividing into halves and cutting out the core. Grease a baking sheet with oil, put the zucchini on it, cut side down. Put in an oven preheated to 180 ° C for 10 minutes. Turn the courgettes over and leave for another 10 minutes.
