    On this basis, the products for the preparation of desserts are selected. Muffins are considered popular baked goods among diabetics - these are small muffins that can have a filling, fruit or curd inside.

    Below will be selected products for making muffins, according to the GI, delicious and, most importantly, healthy recipes that will not affect the patient's blood sugar level will be given. And also a recipe for an unusual citrus tea is presented, which goes well with muffins.

    Foods for muffins and their GI

    The glycemic index is the effect of a food product after consumption on the blood glucose level; the lower it is, the safer the food for the patient.

    The GI can also change due to the consistency of the dish - this directly applies to fruits. If they are brought to the state of puree, then the indicator will increase.

    All this is due to the fact that with such a consistency, fiber is "lost", which plays the role of a blocker of rapid glucose entry into the blood. That is why any fruit juices are prohibited for diabetics, but tomato juice is allowed in an amount of 200 ml per day.

    When choosing products, you need to know the GI division, which looks like this:

    • Up to 50 IU - products are completely safe for diabetics;
    • Up to 70 UNITS - rarely present on the patient's table;
    • From 70 IU and above - under a complete ban, can provoke hyperglycemia.

    Products with a GI up to 50 U that can be used to make muffins:

    • Low-fat cottage cheese - 50 grams;
    • Vegetable oil - 2 teaspoons.

    Beat the egg and sweetener until a fluffy foam is formed using a mixer or blender. In a separate bowl, mix the sifted flour, baking powder and vanillin, add the egg mixture. Mix everything thoroughly so that there are no lumps.

    Peel and core the apple and cut into small cubes. Next, combine all the remaining ingredients and knead the dough. Put the dough only halfway into the molds, since the muffins will rise during the cooking process. Bake in an oven preheated to 200 C for 25 - 30 minutes.

    If you want to make stuffed muffins, the technology does not change. It is only necessary to bring the selected fruit to a puree and place it in the middle of the muffin.

    These are not the only ones allowed for diabetes. The patient's diet can be varied with marmalade, jelly, cakes and even honey cake.

    The main thing is to use oat or rye flour in cooking and not add sugar.

    How else to pamper a diabetic

    Dried fruits can be sliced \u200b\u200bin advance, or soaked whole in rum. I poured the rum over the eye so that it almost covered the dried fruit. I kept it for almost three days, it happened, stirring occasionally. You can not use alcohol, but soak them in aromatic tea or orange juice.

    Grind the pulp of an orange, or you can take only juice and zest. The pulp gives a slight bitterness, but this will not happen if it is carefully cut out so that no white layer remains.

    Mix all the ingredients and bake in an oven preheated to 190 degrees Celsius for 45 minutes. Baking time may vary, check with a toothpick, it should come out dry. I baked in a rectangular cake pan 20 × 10 cm, you can bake in any other, for example, a round one.

    I used seeds, I just wanted to, but in general, you can take any nuts you want, add whole or chop.

    And secondly, our apple cake is a natural transformer! Yes, yes, if desired, some of its components are replaced with others with a light movement of the hand, and various variations of super-healthy baking are obtained.

    For a lean apple cake, we need:

    • 2 cups whole grain flour
    • 1 and 1/4 cups water or vegan milk
    • 2 cups finely chopped dates
    • 1 cup applesauce
    • 1/3 cup apple juice
    • 1 cup chopped nuts
    • 1 tsp ground allspice;
    • 1 tsp soda;
    • 1 tsp baking powder;
    • 1/4 tsp salt.

    Along the way, I will tell you what can be changed in the composition without detriment to the taste of the future cake. Experimenting! So, first, as always, mix the flour with soda, salt and baking powder and leave it on the sidelines for a while.

    In a separate saucepan, combine water (soy, rice, almond or regular milk), allspice and dates (one glass of dates can be replaced with the same amount of raisins). Bring the mixture to a boil and keep it on a tiny heat for about five minutes.

    Add applesauce to the pan (instead of it, you can take carrots grated on a fine grater), mix everything and wait until it cools completely.

    Pour apple (carrot or orange) juice into the cooled apple-date mass and pour out the nuts (finely chopped sunflower seeds may also be in their place).

    Mix the contents of the saucepan thoroughly. And finally, we mix everything with flour, which has long stood aside and is waiting in the wings. Preheat the oven to 190 ° С, grease the cake pan (or multicooker bowl) with vegetable oil and put the resulting rather thick beige dough there.

    40-45 minutes in the oven (50-75 minutes in a slow cooker) and our apple cake (and maybe carrot) is ready! To be sure, we will pierce the very middle with a toothpick, it must be dry.

    It remains only to wait a couple of hours for the cake to cool down and easily pop out of the mold.
