    Cooking method

    The most difficult thing in a cake recipe is to bake the cakes correctly. And if you have ready-made puff pastry, then even this can be done very easily.

    Roll out the puff yeast-free dough into a square of about 30x30 cm on a surface dusted with flour. Place a silicone mat on a baking sheet. Using a rolling pin, transfer the rolled dough onto the mat. Do not touch the dough with your hands, otherwise the layers will shift and the dough will rise unevenly! In order for the dough to bake evenly, you need to make notches on it. There should be three such layers with notches. Preheat oven to 210? and bake for 15 minutes.

    Prepare a classic butter cream: beat the softened butter until white. Vanilla sugar can be added immediately. Add one teaspoon sugar, vanillin - on the tip of a knife. You can add cognac right away. After the oil has changed its color from yellow to white, gradually introduce condensed milk and add powdered sugar. Remove the flaky cakes from the oven and let them cool down. Using a bread knife, carefully trim the edges of the dough. Do not throw away the crumb, it will come in handy for sprinkling. Spread the cream evenly on the dough.

    To make Strawberry Napoleon, you need to cut the strawberries into 4 pieces and distribute them around the entire perimeter of the crust. Repeat the same with the second and third layers.

    To make flaky crumbs, cut the dough pieces into small pieces. Grease the finished Napoleon with cream and sprinkle with crumbs. Sprinkle the cake with icing sugar on top. Leave to stand in the refrigerator for 2 hours to soak in the cream. Cut the finished cake into triangular cakes.

      Let's start with the test! Add lemon juice to cold water. Beat eggs until light foam, add prepared lemon water and salt to them, mix everything and set aside for now. We take frozen butter and three of it on a coarse grater, you can finely chop it with a knife, but, in my opinion, it is easier and faster on a grater. Pour flour (550 grams, set aside the remaining 100 for cream) on the work surface, put butter on top and chop it with a knife, finely-finely). We rake the resulting mass into a small hill and make a depression in it, pour the mixture of eggs into this hole. And knead the dough to make it elastic. We divide a large piece of dough into equal pieces, from which we then buoy to bake the cakes. From this amount of ingredients, I get 7-8 cakes, we form them into balls, wrap them with cling film and put them in the refrigerator for 1 hour.

      Then we roll out each ball on baking paper or on a silicone mat and cut out a circle with the diameter that you need, I take a flat large plate, it is 26 cm in diameter.Then this circle should be pricked with a fork around the entire perimeter so that the cake is quickly and evenly baked and sent it in the oven (we bake the trimmings remaining from the circle with it), heated to 180 degrees for 5-6 minutes, can cook faster, so we focus on the ruddy of the cake, how the blush became, we get it!

      Now let's prepare the cream. This is one of the custard recipes I use, it has a delicate milky taste and turns out to be slightly greasy. So, grind the yolks with sugar and vanilla sugar, add 100 grams of flour and mix. Pour the milk into a saucepan and bring it to a boil, then add it to the yolks, mix everything. We put on a slow fire all the resulting mass, stirring, bring until thickened.

      For a strawberry layer, it is enough to grind the strawberries in a blender.

We put the baked cake in the form, grease it with the already cooled cream, and on top of our cream put the grated strawberries, put the second cake on top, and so on, until you collect the whole cake, do not forget to grease abundantly with cream so that each piece of cake is soaked well. The very top of the cake can be left without strawberries.

    Ingredients:

    Strawberries - 1 kg., Flour - 700-750 gr., Eggs - 10 pcs., Butter - 540 gr. (3 packs), salt - a pinch, lemon juice - 2 tbsp. or 1 tbsp. vinegar (6%), vanilla sugar - 2 sachets, sugar - 400 g., milk - 1 liter, ice water - 150 ml.

    Preparation:

    1. Prepare the dough: sift flour (600-650gr.) On a board or silicone mat, grate chilled butter on a coarse grater, mix with flour. Chop everything into crumbs with a knife. Make a depression in this mass.

    2. Beat 2 eggs, add salt, add lemon juice (or vinegar) to ice water, mix, mix with eggs. Pour this mixture into flour and knead the dough. Knead for a short time so that the dough is light and airy.

    3. Form 10-12 koloboks from the dough, put on a plate, cover with cling film and refrigerate for 40-60 minutes.

    4. Meanwhile, prepare the custard: separate the yolks of the remaining 8 eggs from the whites. Beat the yolks with sugar and vanilla. Add 100 grams of flour and mix well.

    5. Pour milk into a saucepan, bring to a boil over medium heat, but do not boil. Pour hot milk into the yolk mass, stirring vigorously so that no lumps form. Then again pour the cream into a saucepan from under the milk and, stirring continuously, simmer it over low heat. As soon as the cream thickens, remove from heat. Let it cool down. Add butter (180 g) to a lukewarm cream, mix well, cover with foil and refrigerate.

    6. Wash, dry and sort the strawberries - leave large and beautiful berries for decoration, whip the smaller one in a blender with sugar (50 gr.). Put in the refrigerator.

    7. Let's start baking the cakes. We take out the dough from the refrigerator, just not all at once, but one kolobok at a time. Roll thinly on baking parchment. Then, using a plate or dish, cut out a circle with a diameter of 24-26 cm, leave the trimmings at the edges - they will make an excellent crumb for sprinkling the cake - no need to transfer the whole cake.

    8. We often prick the cake with a fork. We bake the cake in the oven at 180 degrees until golden brown (~ 10-12 minutes). We do the same with the rest of the cakes. We put the ruddy cuttings in a blender and grind them into crumbs - I don't have a blender, I managed with an ordinary bag and a rolling pin.

    9. Collect the cake: take out the custard and whipped strawberries. Put the cake on, grease it with cream, then add a little whipped strawberries, cover with the cake again, continue in the same way until the last (top cake) - spread the rest of the cream on it and coat the cake on top and around the edges properly. Then sprinkle it with crumbs on all sides.

    10. The cake must be soaked - for this we remove it for 5-8 hours, or better for the whole night, in the refrigerator. Decorate with fresh strawberries before serving. Instead of strawberries, you can also use raspberries - I think Raspberry Napoleon is in no way inferior to strawberry! Try it!

Even though for speed I took ready-made puff pastry, and the cakes turned out to be dry, the cake soaked very slowly, and it was difficult to cut it. If you wish and have 2-3 free hours for cooking, you can make strawberry Napoleon from homemade puff pastry. Well, if you want something tasty as soon as possible, we make it from ready-made dough, just mind, do not get carried away with purchased ones, homemade is better :)

    Ingredients:


    • puff pastry - 0.5 kg;
    • fresh strawberries - 0.5 kg;

    Cream - option 1:

    • A pack of butter (200g);
    • A can of condensed milk.

    Cream - option 2:

    • Thick cream, homemade - 2 cups;
    • Powdered sugar - 5-6 tablespoons.

    How to make Napoleon cake with strawberries from ready-made puff pastry:

    We defrost the ready-made puff pastry (not puff-yeast, but simply puff pastry), or prepare homemade. After rolling out the finished dough a little and putting the cake on a baking sheet greased with vegetable oil, put it in a well-heated oven and bake until golden brown at 200-220C.
